I can’t seem to get my wheels off my Simson S51 
. Once the nut is removed shouldn’t the spindle just pull out?!

Sounds like the rear wheel, you have a two part spindle, on the right side (chain side) the nut have to stay, the chain stays on the place.
Just grab a 19mm socket or wrench, unscrew the spindle left sided and have some fun while working.

Front or rear wheel? At the front wheel the spindle can jam in the cover of the hub.
